Yamazaki Distillery, located in Shimamoto, Osaka Prefecture, is Japan's oldest whisky distillery and a prestigious name in the world of Japanese whisky. Established in 1923 by Shinjiro Torii, the founder of the Suntory company, Yamazaki Distillery holds a significant place in the history and development of Japanese whisky, having received numerous awards and international acclaim, solidifying their reputation as some of the finest whiskies in the world.
Yamazaki whiskies are crafted using a combination of traditional Scottish whisky-making techniques and a deep appreciation for Japanese craftsmanship. The distillery produces both single malt and blended whiskies, with an emphasis on highlighting the unique characteristics of their locally sourced ingredients.
The whisky-making process at Yamazaki involves carefully selected malted barley, yeast fermentation, and double distillation in copper pot stills. The spirit is then matured in a variety of cask types, including American oak, Spanish sherry casks, and Japanese Mizunara oak. This maturation process imparts complex flavours and aromas, often characterised by notes of fruit, spice, honey, and a subtle hint of Mizunara's unique sandalwood influence.
